Recipe of Vegetable Pulao

Vegetable Pulao is a rice dish prepared by cooking rice with various vegetables and spices. It is quite comforting as well as satisfying. If you want to cook something quick and easy, you can try this awesome aromatic Pulao. You can pair it with raita and pickle. Food processors for chopping the veggies can make your work easier.

INGREDIENTS NEEDED:

  • ½ cup Basmati Rice
  • Oil, one carrot and one onion
  • One finely chopped tomato and chopped French beans – 3
  • Four Garlic, one-inch piece ginger, one small piece of cinnamon
  • Green chili-3, one bay leaf, 2 cloves
  • 1-tsp garam masala
  • 1-tbsp chopped coriander
  • Mint leaves – handful
  • Salt as per requirement
  • Finely chopped coriander leaves (for garnishing)
  • A pinch of Turmeric Powder
  • Two cup of water/ coconut milk

METHOD FOR PREPARATION:

  1. Soak Basmati rice for at least 45minutes. Drain well and keep it aside until needed. Make slices of onion and green chilies. Peal and grind garlic, ginger with little water to make fine paste.
  2. Heat the oil in a pan over medium high heat. Add the sliced onion, green chilies, bay leaf, mint leaves, cinnamon and cloves to the oil and cook for 2 – 3 minutes on medium flame. Add ginger garlic paste and stir for a minute.
  3. Now, add chopped tomato, green peas, French beans and carrot. Fry them until they are half- cooked (softened but crunchy looking).
  4. Add rice drained from water, garam masala, turmeric powder, coriander powder and salt. Mix well and cook on a medium flame for one minute, while stirring continuously.
  5. Now add water/ coconut milk.
  6. Cover it until the rice is well cooked and the water evaporates.
  7. Garnish with chopped coriander leaves and vegetable pulao is ready to serve.
