Recipe of Coconut Curry Chicken Soup

To warm up in chilly evening, Coconut Curry chicken Soup is a very delicious way! The whole family will definitely enjoy this marvelous dinner. This soup is healthy, full of various nutrients like protein, carbohydrates and sodium and seriously very simple to prepare. The main ingredients for this soup are chicken broth, coconut milk, fish sauce, lime juice and green curry paste. The sweetness of the coconut with the curry and various spices make this soup incredibly tasty and healthy. Once all the ingredients are gathered, this soup comes together quickly and easily. Coconut and curry are one of the most exciting combinations. Chicken broth, spinach and peas give this soup a great flavor and texture.

Coconut curry chicken soup

INGREDIENTS:

  • 1-tablespoon oil
  • 3-tablespoon red Thai curry paste
  • Chunks of potatoes
  • Vermicelli noodles
  • 2 Packs of Dabur Hommade coconut milk
  • 3 Cups low fat chicken broth
  • 1-tsp fish sauce
  • 2-tsp red curry paste
  • Garlic, cloves – 2
  • ½ cup chopped green onions (for garnishing)
  • Thinly sliced carrots
  • Snow peas (trimmed and cut in half)
  • Salt- as needed
  • One sliced red bell pepper
  • Mushrooms
  • 1-teaspoon limejuice

METHODS:

  • Heat a large pot to medium high heat. Add curry paste, ¼-cup coconut milk and remain it to boil until it become smooth.
  • Now, add fish sauce, chunks on potatoes, chicken broth and remaining coconut milk, to it and stir well.
  • Then add red bell pepper, snow peas, mushrooms, salt and cook until softened about 4 – 5 minutes.
  • Bring to boil and reduce the heat and simmer it for 7 – 8 minutes.
  • While stirring, put lime juice over the soup to give more taste.
  • Garnish the delicious soup with green onions and serve it immediately.

Now, this easy, tasty and marvelous soup can be serving as a soup or as a stew with Basmati rice or rice noodles.
