Carrot Halwa Recipe

Carrot Halwa is a classic Indian Dessert and is popular almost all over India. Carrot contains Vitamin A, and many powerful health benefits whereas milk provides us calcium, protein, magnesium and phosphorous. Therefore, this carrot halwa is not only tasty to eat but is nutritious too.

The method of preparing this sweet dish is a bit lengthy since we are adding milk and evaporating it in the process. However, it tastes so heavenly with just a handful of ingredients.

This dessert has a divine taste and fragrance that takes you to another world. This dish could be prepared out of carrots, milk and sugar and it will be just perfect to celebrate a sweet occasion.

INGREDIENTS NEEDED:

  • Fresh carrots – 2 cups
  • Milk – 2 cups
  • 3 tbsp of Ghee
  • Sugar – 1 cup
  • Green cardamom – eight seeds
  • Almonds – 10
  • Cashews – 10
  • Two tbsp Raisins

PREPARATION:

  1. Firstly, wash the carrots properly and trim both the ends. Using peeler, lightly scrape the outer skin. Now, grate the carrots using hand grater or use food processor for quicker results. Remove seeds from the cardamom pod and crush them.
  2. Heat one-tbsp ghee in a small pan and roast cashews, almonds and raisins in it. When the cashews become golden, remove the nuts from the pan and keep them aside.
  3. Now, heat two tbsp Ghee in a thick-bottomed pan. Add crushed cardamom for about 30 seconds then add the grated carrots. Cook on a medium flame for about 5 minutes until they turn soft.
  4. Pour milk to the carrots and allow it to boil. Cover and cook the halwa for one hour in a gentle/medium flame. Stir continuously in between so that milk does not stick to the bottom.
  5. Once all the milk is completely drunk by the carrot, add sugar and stir continuously.
  6. Cook well until the halwa becomes thick.
  7. Finally add the roasted almonds, cashews, raisins and one tbsp of ghee.
  8. Mix them well and continuously stir for another four – five minutes until the moisture dries up. Now turn off the flame.

You can serve this delicious Carrot Halwa either hot or cold.
