Baked Potato Soup

This recipe was prepared by Ann Taylor Pitman in October 2002. According to Ann, this recipe was basically for column for Lighten. As per the feedback of Ann, the majority of the people were happy for the first time she tried this recipe. But she did feel soup could have been made better. The ingredient used for the soup had fat free sour cream, which did give a tart taste. After getting some of the ingredients tweaked, the recipe does require less fat sour cream and the results could give better and happier results.

  • 4 baking potatoes that weight about 2 ½ pounds
  • 3 ounces of 2/3 cup of flour
  • 2% reduced fat milk of about 6 cups
  • 4 ounces of reduced extra sharp chedded cheese that is divided. 4 ounces that is available in 1 cup.
  • 1 Teaspoonful of salt
  • Freshly ground black pepper of ½ teaspoon
  • Less fat sour cream of 1 cup
  • Divided green chopped onions of ¾ cup
  • Cooked and crumbled bacon slices of 6 numbers

As Optional, you could have black pepper that is cracked

Preparation

  1. First, preheat oven to 400 degree Celsius. Then cut potatoes using a fork and bake them for 1 hour at 400 degree Celsius till they became tender. You need to peel tomatoes and mash them coarsely.
  2. Then take in dry cups, measuring spoon flour and level using a knife.
  3. Then put the flour in an oven that is Dutch made.
  4. Then gradually add into it and then stir it using a whisk until it becomes blended.
  5. Cook them at a medium heat until it becomes bubbly and thick. This should be done for 8 minutes.
  6. Then add the potatoes that are smashed, cheese of ¾ cup, salt and pepper of ½ teaspoon. Stir them until the cheese melts. Then remove them from the heat on which it was kept.
  7. Stir the content in sour cream and onions that are ½ cup containing. Cook at least 10 minutes or else until they are thoroughly boiled. Then put it into each of the 8 bowls, ladle 1 ½ cup of soup.
  8. Sprinkle the serving each with 1 ½ teaspoon cheese, onions that is 1 ½ teaspoon containing and bacon that is about 1 teaspoon. If required, do garnish the recipe with cracked pepper.

You could add extra salt and pepper for the palates to make it more exciting and tastier. The dish has been considered to be one of the healthy soup available. Potatoes do give a nice hearty texture. But there are other ingredients that separate the soup from other legendary ones. The recipe does use milk and sour cream to give a luscious mouth feel, cheddar cheese that gives a color and for its tang, green onions that give a freshness zing and finally bacon that makes it look better. The overall flavor of this baked potato soup in cream does give a comforting flavor and feel and it does give a comforting soup and definitely it will be likes by all people of all age groups.
