Recipe of Poha – Healthy and Easy to Cook

Poha, chief breakfast recipe from Maharashtra and Gujarat has now become an ordinary breakfast item in almost every Indian household. It is easy to quick recipe and remarkable taste makes it unique.

Poha is nothing but flattened rice mixed with vegetables like onion, potato and Indian spices. Its preparation method changes with change in places and people’s taste. Some add roasted peanuts while some add almonds. Internet is already overflowing with hundreds of recipes of Poha, but if you want to give your taste buds a change someday, then just check out  this simple recipe for your healthy morning. Do not worry about carbohydrates when you see the word “RICE”, notice the word “BEATEN” too.

It is an excellent source of energy and hence can make you work longer. People suffering from iron deficiency can add Poha to their menu as Poha is also a reserve for iron.

Now let us see how this awesome Poha is prepared:

  1. Rinse Poha in clean water until it becomes soft. Do not keep it in water for so long that it absorbs much water and becomes mushy. Make sure that Poha remains separated or else it will end up looking like khichdi.
  2. Now cut onion in small bits. To add to the vegetable content so that it becomes much healthier, you can use cabbage, carrot and peas as well. Cut them in small pieces so that it gets mixed with Poha easily.
  3. If you have peanuts, then roast them in a pan until they become crispy. Take them out and keep aside in a plate.
  4. Potato is extensively used in Poha. Cut it in cube shapes and cook them in medium flamed oil in pan till they become little golden brown and keep them with peanuts.
  5. Now put oil in pan according to the quantity of Poha. When it has become hot, add Rai/mustard seeds.
  6. To this, add cumin seeds/Jeera.
  7. Now add onion to the pan and stir it continuously. Wait for it to turn golden brown.
  8. To this mixture, add roasted peanuts. Stir for 1-2 minutes.
  9. If you have cut other vegetables, add them too in the pan.
  10. Stir everything for 4-5 minutes and now add spices like turmeric, salt, Chilli and Coriander powder as per your taste.
  11. Now add Poha in the pan. Mix it thoroughly with vegetables. Then add potato cubes.
  12. Keep stirring the Poha for 4-5 minutes on low flame
  13. Squeeze lemon juice upon it before serving and then add coriander leaves and grated coconut to enhance the taste.
