Chicken Dum Biryani Recipe

Preparing a delicious chicken dum biryani is not so difficult. It is cooked with boneless chicken marinated and basmati rice in amazing spices and herbs. This recipe is best for a home preparation. This is simple than any biryani as it does not require sauteing of spice. All you need to do is mix all the ingredients and prepare it for a slow fame process. To get a real taste and flavor, do use all the below referred ingredient. A few stuff to keep in mind while making biryani is that you should use good quality chicken, best quality Basmati rice, and the most excellent saffron available.

  1. For the Marination
  • Basmati rice – 500 gram
  • Chicken thighs – 6 pieces (400 gram)
  • White pepper – one tablespoon
  • White pepper – one tablespoon
  • Lemon Juice – half spoon
  • Salt – To taste
  1. For Masala:
  • Desi ghee – Half Tablespoon
  • Cardamoms – 4 or 5
  • Bay leaf – 1 and a small piece of cinnamon
  • Cloves – 2 or 3
  • Ginger paste – one Tablespoon
  • Onion – one cup sliced
  • Yellow chili powder – one tablespoon
  • Saunf or fennel – two tablespoon
  • Salt – To taste
  • Yogurt – One cup
  1. Final spices to be added:
  • Green cardamom powder – One spoon
  • Fennel powder – One spoon
  • Fresh cream – half cup
  1. Masala for rice:

Three tablespoons of rose water, Salt to taste, Ginger and juliennes, two green chilies

Step-by-Step Method For Chicken Dum Biryani Recipe

For the Jhol

  • Wash the rice and marinate it in water for 15 minutes.
  • You need to cut chicken into medium pieces and coat these pieces with the ingredients Marinate for (15 minutes)
  • On other side, heat some butter in the pan.
  • After that, you need to add all delicious spices and herbs for the masala.
  • After sometime, you need to add the onions.
  • After the onions are glossy and nice, add a cup of yogurt.
  • Now add the yellow chili powder.
  • You can then add the chicken along with the saunf powder.
  • You need to add some water and salt.
  • Till the chicken is partially cooked, you need to remove it from heat and let it cool.
  • Once it’s cooled, you need to take the pieces of chicken and put the gravy over the chicken.
  • Then add the finishing spices and cream to the jhol in which the rice will be cooked.

How To Make Rice?

  • Heat a pan by adding rose water and salt to it.
  • When the water boils add the rice. Cook it moderately and keep aside.
  • Take another pan and heat the jhol (half of jhol) that you made earlier along with the chicken pieces.
  • Add half rice to jhol, once this jhol comes to a boil.
  • Add the rice to the jhol, sprinkle some sliced green chillies, and ginger juliennes.
  • Now add the remaining half of jhol and rice.
  • Cook on medium heat and you need to cover it with foil until the water disappears and rice and chicken are fully cooked (for about 10 to 12 minutes).
