Kerala Chicken Roast Recipe

Kerala chicken roast is full of flavor and spices. With the usage of special Kerala garam masala, this dish brings outs extra zing to the recipe. This recipe will also give you an idea about how to prepare Kerala garam masala, which is different from the standard garam masala available in the market. There are many recipes available to prepare Kerala Chicken Roast. Most them are complicated and time consuming. The recipe mentioned here is a simple one and would not take much time as well.

Ingredients:

Chicken – 1 Kg

For marination:

  • Ginger garlic paste – 1 tablespoon
  • Red chili powder – 1 tablespoon
  • Coriander powder – 1/2 tablespoon
  • Turmeric – ½ teaspoon
  • Salt – as required

For roasting

  • Oil – 2 table spoons
  • Chopped onions – 2 to 3
  • Dabur Hommade Tomato paste – 2 tablespoons
  • Cumin seeds – 1 tea spoon
  • Curry leaves – few leaves
  • Grated coconut – 2 table spoons
  • Ginger garlic paste – ½ tablespoon
  • Vinegar – 1 tablespoon
  • Crushed pepper – ½ table spoon

For Kerala Garam masala

  • 2 tablespoon fennel seeds
  • 2 tablespoons of cinnamon
  • 1 tablespoon of cloves
  • 1 tablespoon of green cardamom
  • 1 tablespoon of pepper

Preparation:

  • Clean and cut the chicken into medium pieces and place them in a bowl.
  • To this, add ginger garlic paste, red chili powder, coriander powder, salt and turmeric.
  • Marinate this at least 4 hours before cooking.
  • Once the chicken is marinated, start preparing the chicken roast.
  • Pour oil in a pan and once it is warmed up, add cumin seeds, chopped onions and curry leaves to it.
  • Fry them until the onions get golden brown. Now add grated coconut and mix it thoroughly.
  • Then add the chicken pieces, mix gently for 1 minute and close the lid.
  • Now add the tomato paste to it and mix it well.
  • Closing the lid will make all the moisture from the chicken to ooze out.
  • Now open the lid, add one tablespoon of vinegar and mix well.
  • Cook the chicken now with the lid open until you can see the oil coming out of the curry. Now add crushed pepper, chilies and Kerala garam masala on a medium flame.
  • Fry more and more until the oil comes out.
  • Garnish with coriander leaves.

Preparation of Kerala Garam Masala:

This preparation varies from home to home. Few people mix different ingredients while few of them use the traditional ingredients available.

  • Dry roast each ingredient required for Kerala garam masala separately.
  • Now mix all these ingredients and grind them well.
