Vegetable Pakoras Recipe

Vegetable pakora or pakoda is one of the most popular Indian snacks. Various people prepare onion pakoras as a snack during their tea time and enjoy their time at home. Pakoras are well known to have especially during the rainy season as they are a perfect combination with tea during this chilled environment. However, many of them assume that this preparation is a tedious process and time consuming. Below is the recipe, which is a simple one and requires 25-30 minutes of your time to prepare these delicious vegetable pakoras.

Serves 2-3 people.

Ingredients:

  • Besan or chickpea flour – 2 cups
  • Coriander seeds – 1 table spoon
  • Fennel seeds – 1 table spoon
  • Kasuri Methi – 1 table spoon
  • Garam Masala – 1 table spoon
  • Ajwain or carom seeds – 1 table spoon
  • Sliced potatoes – ¼ cup
  • Sliced carrots – ¼ cup
  • Sliced onions – ¼ cup
  • Sliced bell peppers – ¼ cup
  • Sliced paneer – ¼ cup
  • Sliced eggplant or brinjal – ¼ cup
  • Sliced green chilies – ¼ cup
  • Chopped coriander – As per your interest
  • Chopped spinach or paalak – ¼ cup
  • Water – 2 cup
  • Salt – As required
  • Chili powder – As required
  • Oil – 1 Quart oil

Procedure:

  • Slice the potatoes, carrots, bell peppers, spring onions, chilies, paneer, brinjal or eggplant. Chop the coriander and spinach and keep them aside.
  • Grind the coriander seeds and fennel seeds together and to this add ajwain or carom seeds and mix them well.
  • To this mixture add the besan or chickpea flour and then add little oil to it.
  • Make sure that there are no lumps formed while you mix them. This is to ensure that your pakodas are crispy and crunchy.
  • At the end add the kasuri methi and mix it thoroughly.
  • Now add all the sliced vegetables to this mixture and keep it aside for 5 minutes. You can add as many vegetables as possible to this mixture so that it would give more taste.
  • Keeping this mixture aside for 5 minutes will remove the moisture from the vegetables
  • Now add water to this in order make it a dough. Make sure that the dough mixed properly with these vegetables mixture and add salt, chili powder and garam masala.
  • Keep a pan on the stove and pour oil. Let the oil heat first and then keep low the flame.
  • While you add the dough mixture to the oil in order to fry them ensure that you are not making them balls. Instead, make them flat and thin in order to get the crispiness.
  • Many of them fry the pakoras first then take them out, squeeze the oil and fry them once again. This is a wrong procedure as the pakoras would absorb more oil and you will not have the crispy and crunchy taste from the pakoras.
  • Make sure that you fry them only once until they turn golden brown.
  • Serve these delicious pakodas along with tea.
